Butter Chicken Recipe




Ingredients

For the Chicken Marinade:

  • 500g (1 lb) boneless chicken (thighs or breasts), cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tbsp lemon juice
  • Salt to taste

For the Gravy:

  • 3 tbsp butter
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 3 medium tomatoes, pureed
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1 cup heavy cream (or substitute with coconut cream or cashew paste for dairy-free)
  • 2 tbsp tomato paste (optional for richer flavor)
  • 1/2 tsp sugar (optional, to balance acidity)
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves (cilantro) for garnish

Instructions

Step 1: Marinate the Chicken

  1. In a bowl, combine the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, lemon juice, and salt.
  2. Mix well, ensuring the chicken is evenly coated. Cover and refrigerate for at least 1 hour (preferably overnight for better flavor).

Step 2: Cook the Chicken

  1. Heat 1 tbsp oil in a pan or grill pan over medium heat.
  2. Cook the marinated chicken pieces until they are lightly charred and cooked through (about 5-6 minutes per side). Set aside.

Step 3: Prepare the Gravy

  1. Heat butter and oil in a large pan over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
  4. Add the tomato puree, red chili powder, coriander powder, cumin powder, and turmeric powder. Cook for 10-12 minutes, stirring occasionally, until the oil starts to separate.
  5. Stir in the tomato paste (if using) and sugar, and cook for another 2 minutes.

Step 4: Combine Chicken and Gravy

  1. Add the cooked chicken to the gravy. Mix well to coat the chicken.
  2. Stir in the cream and simmer for 5-7 minutes, allowing the flavors to meld. Adjust salt to taste.
  3. Finish with garam masala and garnish with fresh coriander leaves.

Serving Suggestions

  • Serve hot with naan, paratha, or basmati rice.
  • Drizzle with a little extra cream for garnish if desired.
