For the Chicken Marinade:
- 500g (1 lb) boneless chicken (thighs or breasts), cut into bite-sized pieces
- 1/2 cup plain yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tbsp lemon juice
- Salt to taste
For the Gravy:
- 3 tbsp butter
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 1 tbsp ginger-garlic paste
- 3 medium tomatoes, pureed
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp turmeric powder
- 1 cup heavy cream (or substitute with coconut cream or cashew paste for dairy-free)
- 2 tbsp tomato paste (optional for richer flavor)
- 1/2 tsp sugar (optional, to balance acidity)
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves (cilantro) for garnish
Instructions
Step 1: Marinate the Chicken
- In a bowl, combine the chicken with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, lemon juice, and salt.
- Mix well, ensuring the chicken is evenly coated. Cover and refrigerate for at least 1 hour (preferably overnight for better flavor).
Step 2: Cook the Chicken
- Heat 1 tbsp oil in a pan or grill pan over medium heat.
- Cook the marinated chicken pieces until they are lightly charred and cooked through (about 5-6 minutes per side). Set aside.
Step 3: Prepare the Gravy
- Heat butter and oil in a large pan over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
- Add the tomato puree, red chili powder, coriander powder, cumin powder, and turmeric powder. Cook for 10-12 minutes, stirring occasionally, until the oil starts to separate.
- Stir in the tomato paste (if using) and sugar, and cook for another 2 minutes.
Step 4: Combine Chicken and Gravy
- Add the cooked chicken to the gravy. Mix well to coat the chicken.
- Stir in the cream and simmer for 5-7 minutes, allowing the flavors to meld. Adjust salt to taste.
- Finish with garam masala and garnish with fresh coriander leaves.
Serving Suggestions
- Serve hot with naan, paratha, or basmati rice.
- Drizzle with a little extra cream for garnish if desired.
