Classic Vanilla Sponge Cake Recipe

 




Ingredients

For the Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (225g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, at room temperature
  • 1 tbsp vanilla extract
  • 1 cup (240ml) whole milk, at room temperature

Optional Frosting:

  • 1 cup (225g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 2–3 tbsp milk
  • 1 tsp vanilla extract

Instructions

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch (23cm) round cake pans or line them with parchment paper.

2. Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

3. Cream Butter and Sugar:

  • Using a mixer, beat the butter and sugar together on medium speed until light and fluffy (about 3-4 minutes).

4. Add Eggs and Vanilla:

  • Beat in the eggs one at a time, ensuring each is fully incorporated.
  • Mix in the vanilla extract.

5. Combine Wet and Dry Ingredients:

  • Reduce the mixer speed to low and alternate adding the flour mixture and milk in three additions, beginning and ending with the flour mixture.
  • Mix until just combined (do not overmix).

6. Bake:

  • Divide the batter evenly between the prepared pans.
  • Smooth the tops with a spatula and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

7. Cool the Cakes:

  • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Optional Frosting:

  • Beat the butter on medium speed until creamy.
  • Gradually add powdered sugar, beating on low speed.
  • Add vanilla and milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  • Spread frosting over the cooled cakes, stacking them if desired.
