For the Cake:
- 2 ½ cups (310g) all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup (225g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs, at room temperature
- 1 tbsp vanilla extract
- 1 cup (240ml) whole milk, at room temperature
Optional Frosting:
- 1 cup (225g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 2–3 tbsp milk
- 1 tsp vanilla extract
Instructions
1. Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch (23cm) round cake pans or line them with parchment paper.
2. Mix Dry Ingredients:
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
3. Cream Butter and Sugar:
- Using a mixer, beat the butter and sugar together on medium speed until light and fluffy (about 3-4 minutes).
4. Add Eggs and Vanilla:
- Beat in the eggs one at a time, ensuring each is fully incorporated.
- Mix in the vanilla extract.
5. Combine Wet and Dry Ingredients:
- Reduce the mixer speed to low and alternate adding the flour mixture and milk in three additions, beginning and ending with the flour mixture.
- Mix until just combined (do not overmix).
6. Bake:
- Divide the batter evenly between the prepared pans.
- Smooth the tops with a spatula and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
7. Cool the Cakes:
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Optional Frosting:
- Beat the butter on medium speed until creamy.
- Gradually add powdered sugar, beating on low speed.
- Add vanilla and milk, one tablespoon at a time, until the frosting reaches your desired consistency.
- Spread frosting over the cooled cakes, stacking them if desired.
