Ingredients:
four skinless, boneless chicken thighs or breasts
Half a cup honey, half a cup Dijon mustard, and one-sixth of a cup whole grain mustardTwo tablespoons of soy sauce
Two teaspoons of white vinegar or apple cider vinegar
Two minced garlic cloves
One teaspoon of paprika
Half a teaspoon each of salt and black pepper
One teaspoon of fresh or half a teaspoon of dried thyme
Half a cup of chicken broth
One tablespoon of optional cornstarch (for thickening)
Two teaspoons of water (if cornstarch is being used)
Chopped fresh parsley (for garnish)
Directions:
Get the sauce ready: Honey, Dijon mustard, whole grain mustard, soy sauce, apple cider vinegar, paprika, garlic, salt, black pepper, thyme, and chicken broth should all be whisked together in a bowl.
Put the chicken in there: Place the chicken breasts in a single layer into the slow cooker.
Pour the sauce. Cover the chicken with the honey mustard mixture, making sure to coat every piece.
Cook, cover, and cook until the chicken is soft and can be easily shredded with a fork, about 6–7 hours on low or 3–4 hours on high.
Optional thickening of the sauce: Stir 1 tablespoon of cornstarch into 2 tablespoons of water in the slow cooker to create a richer sauce. Cook until the sauce thickens, 15 to 20 minutes more on high.
Serve: Top with steamed veggies, mashed potatoes, or rice and garnish with fresh parsley.
